I’ve been gluten free for a little over 24 hours now. I feel zero difference, which is exactly what I expected right now. In fact, the more I read the more it looks like two weeks will be the bare minimum time to start feeling something change. I’m now considering doing a full month to give it a fair chance, and here’s why:

Gluten sensitivity:

  • Increases inflammation
  • Irritates autoimmune reactions
  • Makes diabetes, arthritis, IBS, and hypothyroidism worse
  • Decreases your serotonin levels, which increases carbohydrate cravings
  • Causes weight gain

Symptoms include:

  • Bloating
  • Gas
  • Diarrhea
  • Abdominal pain
  • Headaches or migraines
  • Fatigue or lethargy
  • ADD or hyperactivity
  • In rare cases, bone or joint pain
  • Lactose intolerance
  • Eczema

The pink is the stuff I worry about, have issues with, and/or have a family history of. If there is even a TINY chance of any of those things getting better, the smallest glimmer that my stomach will stop hurting? I’m in. So far, it’s not so tough.

Yesterday I ate:

  1. You know…I’ve toyed with eliminating gluten 100% but haven’t done it (yet). I’ve reduced it greatly though. And what strikes me is that I have developed lactose intolerance. I never knew there was a connection. Hmmmm…
