Weird food

Aaron has been working late a lot lately.  He’s got an employee out with a family emergency, and he’s trying to get ahead on an already heavy workload so that he can really relax on vacation.  That means he’s been working until 10pm or later one night a week, and one or two more nights he’s there until 8pm or so.

For me, that means a string of long days in which I find it easier and easier to imagine life as a single parent.  It makes me that much more respectful/in awe of single parents.  I don’t know how you get it all done when it’s just you, but I suppose, like every parent, you just do what you have to to get it all done.  For me, it means letting some things (like my own laundry) go by the wayside for now.

It also means a lot of weird food.  I never feel like cooking when it’s just me and Evi.  Last night, she had a peanut butter and jelly sandwich for dinner.  I had a glass of watermelon wine and some marshmallows.  Healthy, right?  :)   I’m on a mission this week to eat as much of our perishable food as possible, since I don’t want to have to throw away food before we leave.  This means I have four days to eat quite a few eggs, some fruits and veggies, drink a bunch of milk (we’ll let Evi take care of that one) and eat bananas.  Sounds like smoothies in my future, huh?

It also probably means at least one upcoming meal ordered in, since by the end of the week we’ll likely be out of anything resembling a normal meal, and I’ll be scrambling to start/finish our packing on Friday anyway.

What are your weird foods?  What do you eat when it’s just you and you don’t want to cook?  What’s the weirdest combination you’ve thrown together in an attempt to empty your fridge before a vacation or move?

  3. You should make a quiche! That will take care of the eggs and any veggies you feel like throwing in. Plus it can be eaten for any meal.

  4. Nothing better than waking up in your pajamas and having a weird breakfast like an Egg banana and peanut butter sandwich. Good stuff I promise!
